Yesssss warmer weather! What better way to celebrate than with some yummy seasonal food? This is a spin on traditional coleslaw. Usually it is laden with mayo and other heavy ingredients. My version here uses lots of local produce, a light dressing, and some healthy seeds. Delish!
This is a great way to celebrate spring produce! I used ingredients that I had in my HH bag, and it was easy as can be. I combined cabbage, asparagus, and spring garlic to give this slaw a nice crunch, some fun color, and then topped it with some lemon juice and Manoli Canoli olive oil (easy to add to your bag!), and some spices.
The lighter dressing saves tons of calories, and it gives you a dose of healthy fats from the olive oil. I put mine on top of some fish tacos, and it was a lovely complement to the spicy fish. Let’s dig in!
To start, you’ll take half a head of cabbage, and slice it like this:
Then thinly slice the asparagus, but leave the tops intact:
Add in the spring garlic, sesame seeds, poppy seeds, and combine:
Mix up the dressing, then pour over the slaw:
Combine, and that’s it!
Serve on fish tacos or however else you like to eat your slaw! Top with any additional spring garlic for a pretty appearance and extra garlic kick!
1/2 head cabbage
5 stalks of asparagus
2 Tbsp chopped spring garlic, plus more for garnish
2 Tbsp toasted sesame seeds
1 Tbsp poppy seeds
4 Tbsp olive oil
3 Tbsp lemon juice
1/2 tsp salt
1/2 tsp garlic powder
- Slice cabbage and asparagus, then toss with spring garlic and seeds.
- Combine dressing ingredients, then add to the vegetables. Mix well.
